I originally got this recipe from my sister-in-law as it is one of our family favorites for holidays. When she makes it, she cooks the Ramen noodles, but I prefer them crunchy. For some nice color or when having company for dinner, I like to add some red cabbage. The rice vinegar makes for a very light and tasty dressing and it has less sugar than some other similar recipes. Since it is so VERY easy to make, we enjoy it regularly ... I hope you do too!!
Cole Slaw
14 oz bag of shredded Cole Slaw
5 oz of shredded red cabbage (optional)
3 green onions diced
1 pkg chicken Ramen noodles (crush noodles)
1/3 cup sliced almonds or sunflower seeds
Dressing
1/3 cup canola oil
1/3 cup rice vinegar
2 tsp sugar
seasoning packet from Ramen noddles
Mix cole slaw with onions. Make dressing.
Right before serving, top with noodles and almonds or sunflower seeds and add dressing.
