Dessert - No-bake Cheesecake

I had to find foods that I could use with the card suit cookie cutters for my card suit theme. I found some yummmy desserts.

The clubs and spades were easy .... I baked some boxed brownies, cut them out using the club and spade cookie cutter shapes and then frosted them with chocolate frosting.

The hearts and diamonds were a bit more complicated.  One of my favorite recipes growing up was my Mom's no-bake cheesecake (see recipe below).  It's very easy to make in a 9 X 13 baking dish and then she would put some kind of fruit on top. 

First I made the cheesecake, then I used the cutters to cut them out and topped them with raspberries and strawberries to add the red. Since the cheesecake is soft and sticky, it was kind of difficult to cut them and keep the shapes. Also they were on the messy side to pick up and eat, so I put them on cupcake papers so they were easier to pick up. This works, but maybe making sugar cookies with red icing would be another option. No-bake Cheesecake

Use a rectangle 9 X 13 glass baking dish

3 8oz Cream Cheese softend
12oz Cool Whip (I use lite LOL)
1 1/2 Cup Confectioners (powdered) Sugar

Prepare graham cracker crust according to directions on box of graham cracker crumbs.
Bake around 12 mins at 350 until light brown.

Mix above ingredients together with mixer and put in crust after cooling a bit.

Top with fresh fruit or canned pie filling (I like cherry) and chill.
